Russian black bread – much prettier than last time.

Second loaf of Russian black bread, much prettier than the first loaf, despite being the exact same recipe. Is it because I set the bread machine to the correct 2-lb setting, or because I used the “French/Italian” setting that gives a harder crust? More experimentation required!
